Ingredients
700ml Tequila
540ml Fresh Lime Juice
360ml Gran Marnier
Crushed Ice
1 Orange
2 Limes
Salt for the salted-rims
Fill a large pitcher with 700ml tequila, 540ml fresh lime juice and 360ml Grand Marnier, then stir to combine. Before serving, add several handfuls of crushed ice, 2 sliced lies and 1 sliced orange, and let the pitcher sit for 5 minutes to allow the ice to melt a little. Stir again, then pour into salt-rimmed glasses filled with fresh ice. Garnish with a wedge of lime.
Espresso Martini
An after dinner firm fave.

Ingredients
600ml vodka
420ml coffee liqueur, such as Kahlúa, Tia Maria or coffee tequila
300ml freshly brewed espresso coffee
A few handfuls of ice
Coffee beans to serve (optional)
Ahead of time, combine the ingredients in a large jug or pitcher (without ice) and chill until needed. Shake in a cocktail shaker in batches over ice, then strain into glasses to serve.
Negroni

Ingredients
600 g ice
950 ml ginger beer
700 ml vodka
230 ml freshly squeezed lime juice
130 g mint leaves, plus more for garnish
2 limes, sliced, plus more for garnish
In a large punch bowl or jar, combine ice, ginger beer, vodka, lime juice, lime slices, and mint. Ladle or pour over ice with mint garnish.
Elderflower Collins
Sweet and Summery

Ingredients
700ml Gin
350ml Elderflower Cordial
350ml Lemon Juice
2l Soda Water
Combine the gin, elderflower cordial and lemon juice. Add the soda water and ice just before serving, stir gently, then garnish with a lemon slice and a sprig of fresh elderflower, if you like.
Pink Lemonade
One for the kids/non-drinkers
Ingredients
300g caster sugar
1½ lemons, sliced
1 orange, sliced
ice and fresh mint, to serve (optional)
Place all the ingredients in a large saucepan and pour over 350ml cold water. Bring to the boil, stirring often, then leave to cool. Pour through a sieve, pressing down with a spoon to extract all the juices. The syrup can now be stored in the fridge for up to 1 week. To serve, pour a little into a glass and top up with sparkling or still water, ice and mint.
Baby Guinness
And finally… a fun toast alternative: Baby Guinness!

Fill a shot glass almost to the top with coffee liqueur. Top off with Irish cream; it will float on top, making the shot's ''head."
